Garbava Flour Muffins

These are delicious for breakfast or a snack. Fill with chocolate chips or blueberries!


  • 1 cup (Bob's Red Mill) Garbanzo and Fava Flour

  • 2 tsp baking powder

  • 2-3 tbsp coconut sugar

  • 1 egg

  • 1/4 cup avocado or olive oil

  • 3/4 cup water or milk of choice

  • 1 pureed banana

  • 1 tsp instant coffee, or 1.5 tbsp Dandy Blend

  • Dark chocolate chunks or blueberries


  • Preheat the oven to 375F, and line 12-cup muffin tin with cupcake paper or grease the tin with coconut oil.

  • In a medium-sized bowl, mix the dry ingredients.

  • Add the wet ingredients and mix until homogenous.

  • Stir in the chocolate chips or blueberries.

  • Pour batter evenly amongst the cups.

  • Bake for 20 minutes.
