These are delicious for breakfast or a snack. Fill with chocolate chips or blueberries!
1 cup (Bob's Red Mill) Garbanzo and Fava Flour
2 tsp baking powder
2-3 tbsp coconut sugar
1/4 cup avocado or olive oil
3/4 cup water or milk of choice
1 pureed banana
1 tsp instant coffee, or 1.5 tbsp Dandy Blend
Dark chocolate chunks or blueberries
Preheat the oven to 375F, and line 12-cup muffin tin with cupcake paper or grease the tin with coconut oil.
In a medium-sized bowl, mix the dry ingredients.
Add the wet ingredients and mix until homogenous.
Stir in the chocolate chips or blueberries.
Pour batter evenly amongst the cups.
Bake for 20 minutes.
