Pina Colada "Nice" Cream


  • 3 cups frozen pineapple

  • 1 banana

  • 2 cups full-fat coconut milk (typically found in a can)


  • Place all ingredients into a high-speed blender or food processor. Blend until smooth and combined.

  • Pour nice cream into a loaf pan or glass storage container or popsicle molds. Let freeze for 6 hours or overnight.

  • When ready to serve, let sit at room temperature for a few minutes to soften. Top with toasted coconut for an extra decadent treat!
