3 cups frozen pineapple
2 cups full-fat coconut milk (typically found in a can)
Place all ingredients into a high-speed blender or food processor. Blend until smooth and combined.
Pour nice cream into a loaf pan or glass storage container or popsicle molds. Let freeze for 6 hours or overnight.
When ready to serve, let sit at room temperature for a few minutes to soften. Top with toasted coconut for an extra decadent treat!
